Why does a reservation have a zero balance if money was not collected from a guest?

Auto Payments count against the balance due, even before they are collected, which could reduce the balance due to "0". While this means you will not be able to collect payments from the guest manually, it will help prevent over-collection from the guest.
If needed, you can cancel the pending Auto Payment to release the balance due.
