Why is the Guest’s email not listed with their Airbnb reservation?

Due to a new communication flow between Airbnb and Guesty, Airbnb no longer provides a guest email for reservations. Messages sent from Guesty via this new communication flow will go directly to Airbnb's inbox.
As explained in this article, when you set up automated messages for Airbnb reservations, make sure to send them through the booking channel and not as an email, since an email cannot be sent with no destination address.
